At mister parker’s, the room may be a stunning stage but the food is the star and this fall, Executive Chef Pedro Baroso and his team have imagined a sumptuous new seasonal menu. 

“We began developing our new fall menu in June, testing dishes, combining flavors, and the result is a complete dining experience for our guests,” says Chef Pedro. The fall menu offers dishes that are richer and warmer, to highlight the flavors of the season and Chef Pedro says one of the stars of the menu will undoubtedly be Spiced Muscovy Duck Breast. “The dish is rich with spice and the duck is sourced especially for this dish.” Another recipe he is excited about is the Lobster Pappardelle, with lobster tail and caviar. It is deliciously indulgent.

Following the theme of warmer, heartier meals in the fall is the Wagu New York Strip, sourced locally in California. “The quality of the meat is exceptional,” Chef Pedro says. The depth of flavor from fall vegetables is unmatched, so root vegetables accompany many of the dishes, such as parsnips with the Pan Seared Scallops. 

Wine pairings add to the overall enjoyment of any meal and Miguel Herrera, Director of Restaurants at Parker Palm Springs, says earthy, old world wines pair well with fall flavors. “Pinot Noirs, Zinfandels, and Burgundies are excellent choices,” he says. With a cellar made up of wines from the Burgundy and Champagne regions of France, mister parker’s offers an array of unique, distinct, and rare choices to please any palate. To begin the evening, Miguel suggests staying with the fall theme. “The warmth of an Old Fashioned would be a perfect beginning.”

Part of the secret of mister parker’s is a deep understanding of what makes an evening of dining special. To that end, we invite our guests to linger over our meals without feeling hurried or rushed. Our dress code also embraces the sense of occasion — jackets (sports coat or blazer) and collared shirts are required for gentlemen. Look sharp, not formal.
